Vegan Chocolate Avocado Cake
Ingredients:
2 cups all-purpose flour
1 1/2 cups granulated sugar
1/2 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 ripe avocado, mashed
1 1/2 cups water
1/2 cup vegetable oil
2 tablespoons white or apple cider vinegar
2 teaspoons vanilla extract
Instructions:
Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
In a blender or food processor, combine the mashed avocado, water, vegetable oil, vinegar, and vanilla extract. Blend until smooth.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Transfer the batter to the prepared baking pan and smooth the top.
Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
